Why does Joe remember working at the bakery? What does he admire about Jose?

Joe remembers working at the bakery with Jose, and how he let down this nice New Yorker girl that wanted to marry him. Jose was also a bum who got himself a job. He later finds a job that pays more, but doesn’t want to leave the bakery because he was given an opportunity there. Jose finally knocks over a bunch of blueberry pies and his manager fires him. One thing that Joe admires about Jose is that he paid for the pies that he ruined, which was surprising because he used to he a bum and you’d regularly expect them to be greedy about money.
